1 1/3 cup of cubed sweet potato
1/3 cup dry quinoa or rice
2/3 cup of black beans (drained)
1/4 cup of Tahini, peanut butter, almond butter, cashew butter etc
Cumin and chili powder
Get your quinoa or rice cooking (if you’re new to this it’s easy to do. Just take 1/3 cup quinoa or rice and 2/3 cup water and put it in a pan. Bring it to a boil until all the water is gone and your grain is tender)
Toss some oil in a pan, cover and cook your sweet potato until soft, season with a heavy hand of salt, pepper, cumin, and chili powder
After you can push a fork all the way through the sweet potato (it should end up browned and a lil crispy) throw everything into a bowl and mash it together with a fork.
Taste it and add more seasoning accordingly (hook it the fuck up)
Form into 4 patties!
I top mine with avocado, red onion, and bbq sauce on a Pretzel bun.
